Thanksgiving Miracle

Tonight I made the caramel sauce to go on the mashed sweet potatoes that I’ll be contributing to the Thanksgiving meal.  I love this stuff so much that I won’t make it any other time because it just means the holidays to me and it wouldn’t be the same any other time.

I always buy enough ingredients to make it twice.  The first time I’m too cautious and I either don’t let it get dark enough or I get all nervous and in a split second it goes too far and it has that icky burnt caramel taste.  Not what I’m going for.  I just plan on two batches. Always.

But tonight all the stars were aligned and it came out perfectly the first time.  Elena gave it the taste test and pronounced it absolutely right.

I think we had ourselves a little Thanksgiving miracle.

That would make the second one at our house this year, now wouldn’t it?

    The Thanksgiving miracle at the McWilliams’ house? Shannon’s sister’s friend (got that?) is coming to Frederick and she is making some VERY yummy tasting dishes. So I won’t be cooking alone this year ~ yeah! It will be a much more yummy, much more relaxing and much more thank-filled Thanksgiving. Hope you all have a wonderful celebration. Miss you.
